Cucumber Beet Martini

I really never thought I’d be one of those people pushing fall drinks in August. It used to bother me like a personal offense when Oktoberfest beers were released in the middle of the month – it felt like someone trying to cram a pumpkin spice latte down my throat on a hot day at the beach.

And yet, here I am, presenting this Cucumber Beet Martini.

I blame Sarah, really. At least four times now, in the quiet of the apartment as we both worked, or in the car after a lull in conversation, she’s broken the quiet by bursting with the proclamation: “It’s almost Christmas!”

It’s always October in her head, I think.

Barring that excuse, hopefully my early bird attitude will be forgiven by the use of a summer ingredient despite the fall flavors and spices: the cucumber lime vodka.

With the addition of a saturated beet simple syrup, this Cucumber Beet Martini has just the right amount of sweetness, and all that alcohol (it is a martini, after all) is tempered by the lemon juice. Add the crushed coriander, and you’ve got yourself a last days of summer martini worthy of my lengthy description.

The unusual and complex flavor combination is impressive as is, but the color will definitely earn you a few extra points. And aren’t beets supposed to be full of antioxidants and stuff…? So really, if you make this for someone, you’re just helping to preserve their health. Or something.

Tools:

  • Cheese grater, for shredding beets
  • Muddler, or the back of a spoon, if you don’t mind the loss of finesse…
  • Cocktail shaker

Ingredients for the Beet Simple Syrup:

  • 1 beet, peeled and shredded finely
  • 2/3 cup granulated sugar
  • 1/3 cup water

Ingredients for the Cucumber Beet Martini:

  • 3 oz. Svedka cucumber lime vodka
  • 1.5 oz. beet simple syrup
  • 1/8 tsp. whole coriander seeds
  • 1.5 oz. fresh-squeezed lemon juice
  • Ice

How to Put It in Your Mouth:

  1. Start by making the syrup. Place all ingredients for the Beet Simple Syrup in a pot or pan, bring to a simmer, and then simmer for 5 minutes until sugar is dissolved, stirring often. Strain to remove beet pulp, and allow to cool to room temperature.

  2. Add the whole coriander seeds to a cocktail shaker and muddle until crushed and fragrant, then fill the shaker with ice. Add the Cucumber Beet Martini ingredients and shake it until your hands feel like they’ve been dipped in liquid nitrogen, about 20 seconds.

  3. Strain into a martini glass or serve over fresh ice, if you’re one of those strange people who drinks their martinis on the rocks.
    NOTE: If you have one handy, I suggest using a straw – preferably a fancy one – since the coriander can be a little aggressive if you’re strainer isn’t fine enough to keep it from passing through.

Store the extra beet syrup in an airtight container and refrigerate. Or, if you’re like me and hate trying to fit stuff in the fridge, just drink a lot of martinis.
